PALEO CHICKEN TORTILLA SOUP

Hot diggity dog! Fall in Texas is here! I'm already whipping out the jeans and sweaters. How about you? What is your favorite thing about fall?


I love SOUP! Our family is gluten and dairy free due to a few of us having some autoimmune issues. I am always looking for good, clean, paleo, or vegan soups to enjoy till Feb.


This soup is a throw it all in the crock pot and it'll be ready for dinner. I love that. SO MUCH. Call me lazy, ah whatever. HA! I hope this warms your lil' tummy and your heart.


Paleo Chicken Tortilla Soup-


INGREDIENTS:

meat -

2 pounds of boneless/skinless/organic chicken breasts


canned goods -

1 16 oz bone broth

1 can coconut milk

2 14 oz cans of fire roasted tomatoes

1 4 oz can green chilies


produce -

1 chopped yellow onion


spices -

cumin

chili powder

salt

pepper


garnish -

avocado

cilantro

lime

Siete tortilla chips

vegan cheese of your choice

vegan sour cream of your choice


DIRECTIONS:

Put all of your canned goods in the crock pot and stir till mixed. Add in the chopped onion and the spices.Stir. Add chicken. Put the crock pot on high for 4 hours. Shred the chicken when it's all done.


Yeah, that's it. Not even kidding.

Garnish how you like with all the goodies.
